Tip To Enjoy Fondant Cake




Recently, we heard many people don't really like to eat the cake of the 3D fondant cake. There are many reasons like "too sweet", "too hard", "too dry" & etc... Now, we will give everyone 2 tips that you can really enjoy the cake.














1. Serve with ice-cream (any ice-cream flavour you like)



2. Serve with hot melted chocolate 


You can also add your favourite healthy nuts if you want.

Making of Planes 2 figurine

Hello, this is Belin, Eric's wife. Just noted that Eric has not really updated this blog for some time.. the last post was few months ago! Eric was really busy making all the cakes (check out the gallery for the photos)..

So I have decided to write up something for him. Not too long ago we were approached by a customer to make a cake with figurines from the cartoon movies that were released this year - namely Despicable Me 2, Planes 2, Monsters University, Turbo and The Smurfs 2 to surprise his 5 year old son for his birthday. Minions from the Despicable Me are so popular so of course we have used that for the cake :)

Anyway, this post is really about the making of the Planes figurine. Eric has designed the Planes figurine to be flying or 'stay in the air' to make it more real as it is a plane afterall so it was definitely not an easy task to do it.

In order for the plane to 'fly', the figurine cannot be too heavy so the only way was really to use styrofoam dummy for that. So he started with downloading all the photos from the internet and started with the shaping of the plane figurine. He decided to use a thick metal wire to connect the plane as the method to make it 'fly'. Check out the photo below for a visual image :)



Ok so that was done. The next difficult part was the wings. If Eric were to stick the sugarpaste fondant to the dummy, the sugarpaste will drop as it was too heavy! So he had to think of ways to hold the sugarpaste wings. So he has used 3 wires to connect them...and again it wasn't easy to make it stable but after a few attempts, he finally made it...:)

The process of making number 1 kids birthday fondant cake



I have always wanted to write about the process of the making of my cakes but I just have not had a chance but now finally I can sit down and write a few words about the making of 1 of the cake that I have made few weeks ago.

The cake was made for my friend's 1 year old daughter, Valerie. My friend, Stephanie wanted a simple 'number one' cake. She showed me a picture of the style that she liked then I did it my own version.

I have made a sketch of how the cake looked like and sent it to Stephanie. Once she was happy with it then I started to make the baby bottle, name blocks, bees, flowers and bear.



Once these are all done then I started to bake the cake. I have baked the cake in 1 10inch square cake pan in 2 batches. Once the cake was cooled, buttercream was laid in the layers. Then I had to measure and cut the cake so that I could get the 'number 1' shape. Buttercream was laid again to cover the whole cake. Unfortunately I could not show the photos of the cake cutting process as my wife was busy with baby Cherry so she could not help me with capturing the photo.

Once that was done I covered the cake with the pink colour fondant. That was the first time I covered a number one cake.  It was slightly different from covering a normal round cake. Obviously it was more time consuming! So now I know I need to allow that in my costing for both shaping the cake and the fondant covering  :)

I also spent quite some time in cutting the name and 'happy birthday' wordings as I just bought a patchwork cutter so I was not sure how to actually use it. Hopefully I can find a quicker way to do it next time. Anyway,  after all that was done it was time to decorate the cake! I had to measure the length of the ribbon (non-edible) and stick onto the cake and piped the dots with royal icing. Then only I glued everything in place. So here is the final product of the cake!

Ai Bake House Rebranded to Ai Designer Cakes by Eric Chong

After a few months of thinking the new name and getting the right logo design, we have finally worked out the final version of the logo.

The latest logo looks simpler and cleaner compare to the old one. The name is also easy to remember.

New name, new logo and a new start for Eric Chong.

Who is Eric Chong?

Who is Eric Chong?

Eric is a UK born lad but was raised in Kuala Lumpur, Malaysia. He had been working as a Graphic Designer for more than 8 years. In 2007, he went to UK to further his studies in Bachelor of Graphic and Visual Communication for 2 years. Once graduated, he worked for a toy design company in UK for 3 years. 

In year 2009, he discovered his new interest, BAKING. He started to bake some simple cakes by referring to simple recipes from the Internet and books. The reason he likes to bake is he feels happy to see all smiling faces whenever people try his creations. Cakes and desserts always make people happy!

He started to bake every weekend whilst he was still working full time as a Graphic Designer. Like everyone else, not all of his cakes that he baked were perfect. He was eager to improve his baking skills so he attended a 5 days 1-to-1 personal baking course during his holiday in Malaysia. He has shared his cakes with his colleagues, friends and neighbours, and with the support, advice and courage from them after trying his cakes, he then decided to continue his dream.


In 2010, he started Ai Bake House, a home baking business in the UK. Starting a business as a foreigner was never easy let alone it was a work from home business where the opportunities to approach customers were limited. However, with his continued efforts to 'market' his cakes on the internet, he gained a few loyal customers.


In 2011, he found out that he should utilise his design skills in sugarcraft cake decorating and so he attended a 6 days basic sugar craft course in the UK.  At that time, angry birds was very popular so he started his first sugar craft cake using angry birds as a theme for a friend's birthday. Again, he has received very good feedback from his friends!

With all the basic skills, he spent most of his time to think, create, experiment and look for some new baking techniques from Internet & books during the rest of his extra time. He is enhancing his baking skills everyday, every week, every month. Until today, he is still trying out and learning some new baking techniques.



In January 2012, he has married his wife, Pei Lin. Not long after their marriage Pei Lin was pregnant. After a long consideration, they have decided to move back to Malaysia to raise their family. They arrived back to Malaysia in October and their daughter, Cherry was born in November.


After months of thinking, Eric has decided to rebrand Ai Bake House to Ai Designer Cakes by Eric Chong. He hopes that he can make more creative cakes with his love and passion in baking and make people happy!
